Fillet Steaks
with Rosemary & Garlic Butter

Cooked on Kamado Joe BBQ

Steaks brushed with a little garlic and rosemary butter whilst cooking

Served with Tenderstem Broccoli & Homemade Blooming Onions!

For the sauce:

Nob of butter, 2 chopped shallots, 2tbsp green peppercorns soaked in brine, 500ml beef stock, 50ml red wine, 50ml double cream, 50ml brandy.

Saute your shallots, add brand, peppercorns, stock and wine and reduced by half. Add cream

For the onions:

Slice white onion down the just before the root. Flour dredge with S&P, garlic, paprika and cayenne pepper. Place in beer batter and fry at 150C until fully cooked.

Striploin with Spicy Rice

Ingredients:

Kettyle Striploin, Asparagus, Tenderstem Brocolli, Chilli Oil, Packed of cooked rice, Coriander, Onion & Carrot

Method:

Slice & Dice the vegetables, oil your steak in a chilli oil or similar. Sear your steak and rest. Heat your wok or pan and get your vegetables cooking, add garlic, onion and carrot, followed by the rice. Fry the tenderstem broccoli and asparagus lightly to keep the crunch. Add your rice, steak and vegetables to a bowl – garnish with some coriander and fresh chopped chilli!
